New Salsa Recipe!

A few years ago, I made fresh salsa for the first time ever, and I shared that recipe here on the blog. This summer my Roma tomatoes have been killing it in my garden and so I’ve been making a lot of fresh salsa and pasta sauce for the freezer! However, a few batches of salsa ago I changed up my recipe and I think I love it more than my previous version!

So, I just wanted to share that with you all today 🙂

Ingredients:

  • 3-5 Roma tomatoes, depending on their size
  • 1/2 can of black beans
  • frozen corn
  • green onions
  • lime
  • garlic
  • cajun seasoning
  • cilantro

That’s it! haha. I feel like I’m forgetting something, but I’m not because I don’t use red pepper anymore and I use less black beans and corn so that I make a smaller batch of salsa that gets eaten before it goes bad! My old version used to make A LOT of salsa, and I could never eat it all in three days! That’s my personal limit for eating fresh salsa, because one summer I had food poisoning three times in a month (not from salsa) but ever since then I’ve been really wary of how long things are in the fridge, haha.

I throw the black beans and the corn and garlic in a frying pan with the cajun seasoning, long enough for the corn to not be frozen anymore. Dice up the tomatoes, and add as much green onion as you like, and then mix everything together! I eyeball the cilantro and lime!
