I really like making big batch meals – it’s cheap, and you get multiple dinners or lunches out of it! Every Sunday I get all my lunches for the work week ready, and it’s typically the same lunch for all four days (day five is crockpot friday!)! I often do veggie burritos that I make a bunch of at once (probably 14-16) and freeze and then pull them out for lunch when I don’t have leftovers to eat. But this last round when I ran out, I didn’t make any more. So I’ve been doing something different almost every week.
Lately though I’ve felt like I’ve been in a lunch rut! Are those even a thing?!

This week I decided to try something I’ve never made before!! Hummus + veggie wraps!
I’m not going to lie – I was a little skeptical as I was making these. I love veggies, and I love wraps, but to have JUST bare veggies in a wrap? I wasn’t sure how that was going to go for me. I was pleasantly surprised at how much I actually enjoyed it and how good I thought it was! I’m so excited to eat the rest of them this week!
Here’s what I put on mine, and it can obviously vary to your own liking!
- habanero + lime tortillas from Trader Joes
- spicy hummus spread across the middle of the wrap
- spinach leaves
- cucumbers (sliced the long way so it doesn’t fall out!)
- shaved carrots
- broccoli sprouts
- avocado
- green pepper
- tomato
That’s it! Super easy to assemble, although I cut the cukes a little too long so it was kind of hard to fold the ends in to wrap it. Lesson learned for next time! If you eat wraps like this, what veggies do you like on yours?!
