I really love making food from scratch. It’s even better when it’s quick, simple, healthy, AND delicious! One of my favorite dishes to whip up is pasta with an avocado basil sauce instead of a tomato sauce. The original recipe is from Oh She Glows.
I LOVE avocado, so I could seriously eat this all day long and be so excited about it.
The only ingredients you need for the sauce are:
- 1 avocado
- 1/2 lemon for the juice
- handful of basil
I use this amount for half a box of spaghetti or fettucine or whatever I have on hand. If you want to use a whole box, double the ingredients. The best part about this sauce is that you can change it up however you want! You can add garlic or other spices to it if you find it needs more flavor!
In a food processor, blend all the ingredients together until it’s creamy (if you need to, add some water to it) and then add it to your pot of cooked pasta! Serve with some cheese sprinkled on top and enjoy! You could also saute some cherry tomatoes + garlic and add it to the top of the pasta as well! So many options 🙂
I’m only a little sorry for the instagram photo – it’s the best one I had of this dish, and I have a habit of forgetting to take photos of the food I make with my actual camera!
