Portland, Maine Photographer :: Chicken noodle soup recipe

Homemade chicken noodle soup is my new favorite recipe. It is SO simple to make, and it tastes absolutely yummy! The great thing about this is that it could easily be turned into a vegetarian dish by using vegetable broth and no meat 🙂 This soup also gives you the freedom of adding in whatever you want! It’s just awesome 🙂

Ingredients:

  • noodles
  • carrots
  • 1 diced onion
  • minced garlic
  • chicken base/broth – 9 cups
  • basil  (I just eyeball an appropriate amount – really to taste)
  • oregano (same as the basil)
  • olive oil
  • two chicken breasts.

#1. Before you saute the onion and garlic in olive oil, you want to boil the two chicken breasts until they are fully cooked. Once they are cooked, shred them into bite sized pieces.

#2. Cook the onions and garlic in olive oil until they are tender.

#3. Combine the remaining ingredients into the pot and let it all cook for twenty minutes or so. 

#4. Serve with some bread and enjoy!
