I have recently discovered that I LOVE making fresh, homemade salsa! And, not to toot my own horn or anything, but I’m pretty dang good at it! My recipe has evolved since the first time I tried this at the end of the summer, and I LOVE it. Here it is!
Ingredients:
- 4 tomatoes
- 5 cloves of garlic – I really like garlic, so this is up to you!
- a little more than 1/2 a red onion
- corn
- 1 can black beans
- 2 red peppers
- 2 limes
- I add 2 or 3 hot peppers
- basil (eyeball it)
- cilantro (eyeball it)
- oregano (eyeball it)
#1: I quickly cook the black beans and corn in a skillet with cajun seasoning.
#2. Dice up all your remaining ingredients, except for the limes.
#3. Throw everything into a mixing bowl. Squeeze two limes over the bowl and mix everything in.
#4. Add your seasonings to taste and serve with chips! I find that it tastes better if I let it sit for a couple of hours before eating for the first time. The flavors really meld together! 🙂
