It’s no secret I love to eat. I love to eat healthy. I REALLY love when eating healthy tastes pretty good! So, here is a recipe I found and then tweaked for my own!
Ingredients:
- chicken breast (2)
- spinach
- garlic
- mushrooms
- feta cheese
- noodles – optional (brown rice noodles, whole wheat noodles, really whatever you prefer)
- oil
For those who have seen some recipes of mine in the past, when it comes to cooking I eyeball most things. Steven on the other hand follows a recipe for a meal down to the last teaspoon, haha. It’s kind of adorable how seriously he takes it! Anyway, this one is no different, I eyeball everything.
#1. Heat up a skillet with probably a tablespoon of oil. Sauté the garlic and mushrooms in the oil until they’re soft. Don’t burn the garlic though!
#2. While those are sautéing, cut up the chicken breast into bite sized pieces. Move the garlic and mushroom to the outer edges of the skillet and throw the chicken in the middle, and let it cook.
** The original recipe called for parmesan cheese, but Steven had it with him at work so I improvised and used feta cheese and I LOVE how it tasted. If you want to use parmesan cheese instead, coat the chicken mixture when it’s done cooking with parmesan before adding the spinach.
#3. Once the chicken is done, throw the spinach on top and cover it until it’s done cooking!
#4. Place the chicken mixture on a bed of cooked noodles, or just eat it as is! Sprinkle it with feta cheese and enjoy!
