I am going to apologize for my lack of photos for this one – it’s just so easy to make that I ALWAYS forget to take my camera out for the process of making it!
One of my new favorite things to make is black bean casserole because it so yummy, easy and cheap!
Ingredients:
- 1.5-2 cups of brown rice
- 3-4 cups of chicken broth, or you can use vegetable broth (3 for 1.5 cups of rice, 4 for 2 cups)
- 1.5-2 cans of black beans
- 2 cans of diced green chiles
- carrots
- spinach
- corn
- cayenne pepper
- mozzarella cheese
- parmesan cheese
For those last six things on the ingredients list, I just put in however much I feel like having that night 🙂 You can add just about anything to this recipe!
#1. Cook the brown rice in the chicken broth.
#2. When the rice is completely cooked, put it in a big casserole dish.
#3. Add the remaining ingredients and mix it all in together.
#4. Put in a 375 degree oven for about 25-30 minutes, and enjoy!
Sometimes when I have leftovers, I put the casserole into a wrap with salsa and more spinach and it tastes awesome.
