Homemade pasta & garlic bread :: Recipe

Y’all know how much I love food. ESPECIALLY homemade food. Since moving to Portland, I’ve had a renewed interest in eating well and making as much food from scratch as I can. One of the things we love to make ourselves is pasta and garlic bread – one of my favorite meals 🙂

Pasta:

  • 3 eggs
  • 2 cups of flour

Garlic Bread:

  • A loaf of italian bread (I haven’t quite started making my own bread yet!)
  • 2 sticks of butter
  • 5 cloves of garlic
  • cilantro (eyeball it)
  • oregano (eyeball it)
  • 1 tbsp olive oil (actually, a liiiiittle bit less than a tbsp)
  • salt & pepper to taste

When it comes to making the pasta, we use a pasta press that flattens the dough and then cuts it into the pasta we desire. You can also use this dough to make ravioli by hand, which is just as easy, though a little more time consuming.

To make the pasta: I use my kitchen-aid to mix the flour and eggs together until it forms a ball. However, put the flour into the mixing bowl first, and create a little “bowl” in the middle to hold the eggs. Then fold it in and start mixing it. Once the dough has been formed into a ball, knead it on the counter for about five minutes, adding more flour as needed. Let it sit covered (I just turn a bowl upside down over it) for about 45 minutes to an hour. Once that time is up, start to boil a big pot of water on the stove so it is ready when you are done cutting the dough.

Cut the ball of dough into fours, and then run it through the pasta press (or roll it out) to your desired thickness. We like our pasta pretty thin, so we will run it through the press five or six times. Once it is all rolled out, put it through the attachment for cutting the dough. Once it is all cut, just throw it into the pot of water for about 4-5 minutes. It doesn’t take long to cook at all!!

To make the bread: Pre-heat the oven to 350 degrees. Cut the loaf of italian bread in half, the long way. Soften the butter in the microwave (don’t do it for too long, because if it gets liquidy it can make the bread super oily). Add the remaining ingredients to the bowl and mix it all together. Spread the garlic butter onto the bread, and put it in the oven for about 10-15 minutes, depending on how crispy you like your bread. Sometimes, when there is about four or five minutes left, I will add cheese to the top of the bread to make cheesy garlic bread! So yummy!
